Our Greek heritage plays such an important role in how we feed our family. In an effort to embrace both our heritage and modern-day life in Australia, we asked friends and family to create a recipe that embraced both. A token of gratitude to the country that has given our family opportunities to thrive whilst honouring our roots. It gives us great pleasure to share a recipe created by @melpomeni.matthews who shares our ethos of Meraki in her kitchen. In her recipe, Melpomeni shares how you too can bring an Australian showstopping centrepiece with Greek flavours to the table with gorgeous aromatics of saffron, orange, thyme and honey.

Hellenic Honey Glazed Ham
What you'll need
- 7kg Traditional Ham On Bone
- 1 cup Honey
- 1/4 cup Olive Oil
- 1 cup Fresh Orange Juice
- 1 pinch Saffron Threads infused in 1/4 cup boiling water
- 6 sprigs Fresh Thyme
- 1 tbsp Cloves
Instructions
- Preheat your oven to 200°C
- Place honey, thyme, olive oil and orange jucie in a saucepan over high heat and whisk to combine. Add the saffron and the liquid and bring to the boil.
- Reduce the heat and simmer for 10 minutes until thickened and slightly syrupy. Set aside
- Prepare your ham by removing the skin and scoring a diamond pattern. See Andrew's instructions on How To Prepare your Ham for Glazing.
- Place the ham on a lightly greased wire rack in a baking dish lined with non stick baking paper.
- Press a clove into the centre of each diamond and brush with a thin layer of glaze.
- Once the fat starts to render, brush generously with glaze, repeating until the ham is golden and caramelised. Approximately 1 hour.
- Serve warm or at room temerature.
